1 1/6 oz Irish whiskey
2/3 oz Créole Shrubb liqueur
2/3 oz Pineapple juice
1/2 oz Lime juice
1/4 oz Falernum liqueur
1/6 oz Pineapple syrup

Serve in a julep tin

  1. 1 SHAKE all ingredients with ice and fine strain into a glass or julep cup filled with crushed ice.

History

A sweet and sour drink with Irish whiskey, orange, and lime, featuring light spice.

This riff on a Mai Tai was adapted from a recipe created at the Bang Bang bar in Teeling Whiskey Distillery in Dublin, Ireland, and was originally based on Teeling Small Batch Irish whiskey. "Redleg" is a derogatory term for poor white immigrants to the Caribbean islands, particularly Irish immigrants to Barbados who were forced to work the sugar plantations during the 17th and 18th centuries. Their sunburnt fair-skinned legs gave rise to the name. The hardships endured by Irish immigrants are commemorated in the ballad To Hell or Barbados and in the title of the June 2007 studio album by Irish singer-songwriter Damien Dempsey.
