Ingredients

1 1/2 oz Dry vermouth
1 oz Bourbon whiskey
3/4 oz Bénédictine D.O.M.
1 dash Peach bitters

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of peach wedge.

Method

  1. 3 STIR all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Garnish with peach wedge on rim.

History

A Manhattan style drink featuring dry vermouth in a larger quantity, Bénédictine, and peach bitters.

William James "Billy" Tarling created this recipe, which was later featured in his 1937 book, The Café Royal Cocktail Book. The "ROYALIST" is attributed to W. J. Tarling and calls for ½ Dry Martini Vermouth, ¼ Bourbon, ¼ Benedictine, and a dash of Peach Bitters, to be shaken and strained.
