Ingredients

1 1/2 oz Light gold rum 1-3yo
2/3 oz Ruby port
1/6 oz Pimento dram
3/4 oz Lime juice
1/2 oz Sugar syrup 'rich' (2:1)

How to make

Serve in a collins glass

Prepare

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of aromatic bitters and lime zest.

Method

  1. 3 POUR all ingredients into chilled glass.
  2. 4 Two-thirds fill glass with crushed ice and SWIZZLE.
  3. 5 Add more crushed ice to fill glass and SWIZZLE some more.

Garnish

  1. 6 Garnish with lime zest twist and dash bitters over ice cap.
  2. 7 Serve with a straw.
