8 fresh Mint leaves

1 1/2 oz Calvados apple brandy

1 1/2 oz Apple juice

1/4 oz Sugar syrup 'rich' (2:1)

2/3 oz Brut sparkling wine

How to make

Serve in a old-fashioned glass

1 SHAKE first 4 ingredients with ice and fine strain into ice-filled glass
2 TOP with sparkling wine.

History

Spirity, minty apple invigorated by champagne.

This is an adaptation of Colin Field's signature drink. Field first served it on December 31, 1994, at the Bar Hemingway in the Paris Ritz Hotel for Jean-Louis Constanza. Upon tasting it, Jean-Louis exclaimed, "Serendipity!"
