Ingredients

1 1/2 oz Tsipouro
1 1/3 oz Riesling wine
1/3 oz Honey and water syrup
1 dash Soy sauce

How to make

Serve in a nick & nora glass

Prepare

  1. 1 Select and pre-chill a NICK & NORA GLASS.
  2. 2 Prepare garnish of skewered green olive.

Method

  1. 3 STIR all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Garnish with skewered olive.

History

This cocktail combines grape spirit with wine and adds honeyed richness and soy sauce. Balancing the wine and honey is tricky, as is selecting the soy sauce. Patience is rewarded with an easily replicated flavour.

This recipe, developed by Dimitris Kaitalidis at Nectar Distillery in Thessaloniki, Greece, was among the ten winning entries in the 2021 O/Purist Quest. The following explanation is offered: "Sileni used to be a group of followers of the wine God Dionysus, mythological creatures with ears, tails and horse's hooves. They helped with winemaking and were characterised by drunken joy and ecstasy. Sileni, along with Satyrs and Maenads were Dionysus' entourage during his epic feasts and dances. This drink is pays homage to the God of Wine by using grape distillate O/Purist Tsipouro and wine."
