Ingredients
2 oz Gin
1 oz Citrus juice
2/3 oz Sugar syrup 'rich' (2:1)
2/3 oz Egg white
8 drop Ginseng bitters
2 oz Soda water
How to make
Serve in a fizz or highball (8oz to 10oz)
Prepare
- 1 Select and pre-chill a FIZZ OR HIGHBALL (8OZ TO 10OZ) GLASS.
- 2 Prepare garnish of quarter lemon slice wheel.
Method
- 3 SHAKE first 5 ingredients (all but soda water) with ice and strain back into shaker.
- 4 DRY SHAKE (without ice) to emulsify.
- 5 FINE STRAIN into chilled glass and place in a freezer to allow the foam head to form a layer.
- 6 After a minute or so, slowly POUR soda from a higher-than-normal height to raise the foaming head above the rim.
Garnish
- 7 Garnish with quarter lemon wheel on rim.

History
A Gin Fizz variation mellowed and fluffed with egg white. While it's possible to create a visually impressive head far above the glass rim, the extra soda needed dilutes the cocktail considerably, making it difficult to enjoy the liquid beneath the foam.
