Ingredients
1 oz Light gold rum 1-3yo
1 oz Light white rum
1/2 oz Pineapple juice
1/2 oz Lime juice
1/3 oz Sugar syrup 'rich' (2:1)
1/3 oz Egg white (pasteurised)
6 drop Daiquiri bitters
3 drop Saline solution 4:1
How to make
Serve in a coupe glass
Prepare
- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of lime zest twist and pineapple wedge.
Method
- 3 SHAKE all ingredients with ice and strain back into shaker.
- 4 DRY SHAKE (without ice) to emulsify.
- 5 FINE STRAIN into chilled glass.
Garnish
- 6 Express lime zest twist over cocktail and discard.
- 7 Garnish with pineapple wedge on rim.

SNOW WHITE 1 part Sugar Syrup 2 parts Lime Juice 2 parts Pineapple Juice 8 parts White Cuban Rum 1 Egg White to each 2 drinks Preparation should follow the method outlined for the September Morn. When fresh pineapple juice cannot be obtained, a passable substitute can be fashioned by using pineapple syrup in place of sugar syrup, though the result will be inferior.
