Vanilla ice cream
1/2 oz Cognac (brandy)
1/2 oz Orange Curaçao
1/2 oz Maraschino liqueur
1 1/2 oz Brut sparkling wine

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of orange slice/wedge skewered with Luxardo Maraschino Cherry.

Method

  1. 3 PLACE scoop of ice cream in base of chilled glass.
  2. 4 ADD next 3 ingredients and STIR to dissolve and incorporate most of the ice cream.
  3. 5 TOP with sparkling wine (which should foam).

Garnish

  1. 6 Garnish with orange slice/wedge on rim skewered with maraschino cherry.

History

Integrated ice cream avoids dominating this classic dessert-style cocktail, remaining a treat but not overly sweet.

Alexis Benoit Soyer (1810–1858), London's first celebrity chef, is credited with naming and likely creating this cocktail. This extravagant French chef captivated royalty and the aristocracy during the Victorian era, transitioning from their employ to a position at London's Reform Club. Soyer departed the Reform Club, where his famed Lamb Cutlets Reform remain on the menu, to launch his Gastronomic Symposium at the Great Exhibition. This event featured an American bar that, according to Dr. Anistatia Miller and Jared Brown, offered "40 different concoctions including his own Soyer au Champagne..." Soyer authored several significant books, including The Gastronomic Regenerator in 1846. While this volume contains numerous champagne-based recipes, it notably omits a Soyer au Champagne. However, a cocktail named "Sôyer au Champagne" is present in the earliest French cocktail compendium, Emile Lefeuvre's 1889 Méthode pour composer soi-même Les Boissons Américaines. This iteration, however, bears little resemblance to the drink known today. SÔYER AU CHAMPAGNE Le Soyer au Champagne n'est que le champagne Cobbler simplifié. Seven years onward, the Soyer au Champagne recipe detailed in Louis Fouquet's 1896 publication, Bariana, aligns more closely with the contemporary cocktail. Despite this, Fouquet directs the use of "Verre B" (Glass B), which is a Cobbler glass, a style akin to a tall tumbler. The 1900 book American-Bar Recettes des Boissons Anglaises & Américaines, by Frank Newman, features a Soyer au Champagne recipe specifying Glass No. 8, "Verre Soyer." The definitive modern rendition of the Soyer au Champagne originates from Harry MacElhone's 1922 book, Harry's ABC of Mixing Cocktails. This version was possibly popularized further by its inclusion in the 1949 edition of Esquire's Handbook For Hosts, where it is noted as having been "one of the most popular drinks at Christmas in the continental cafés." Both of these recipes suggest serving in a tumbler glass. While serving the modern iteration in a chilled old-fashioned glass is acceptable, it lacks the refined elegance of a coupe, which would arguably be more fitting for Soyer, the distinguished Victorian celebrity chef. Soyer au Champagne. In a large tumbler put 1 measure of Vanilla Ice Cream, 2 dashes Maraschino, 2 dashes Curaçao, 2 dashes Brandy. Fill balance with Champagne, stir well, and add a slice of Pineapple, a slice of Orange, and a slice of Lemon, 2 Cherries, 2 Strawberries. (A very popular beverage on the Continent.)
