Ingredients

3/4 oz Reposado tequila
3/4 oz Red quinquina e.g. Dubonnet, Byrrh
3/4 oz Pacharan liqueur
1/6 oz Mezcal
3/4 oz Orange juice
4 drop Chocolate bitters

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of orange zest and star anise.

Method

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

Garnish

  1. 5 EXPRESS orange zest twist over cocktail and discard.
  2. 6 Garnish with star anise floated on cocktail.

The name "Spanish eyes" is explained thus: Tequila distillers speak Spanish, Byrrh is produced near the Spanish border, pacharan is very Spanish, as are the finest oranges. Furthermore, the creator's partner is half Spanish, possessing brown eyes, and the drink itself has a brownish hue.
