1/3 oz Egg white (pasteurised)

1 1/3 oz Soda water

5/6 oz Dry cider

How to make

Serve in a fizz or highball (8oz to 10oz)

1 SHAKE first 5 ingredients with ice and strain back into shaker
2 DRY SHAKE (without ice) and fine strain into chilled glass charged with soda
3 TOP with cider.
