Ingredients
1 oz Gentian liqueur
1/2 oz Pear liqueur
1/3 oz Mezcal
2/3 oz Lemon juice
1/3 oz Sugar syrup 'rich' (2:1)
1/2 oz Egg white (pasteurised)
How to make
Serve in a old-fashioned glass
Prepare
- 1 Select and pre-chill an OLD-FASHIONED GLASS.
- 2 Prepare garnish of pear slice (dehydrated).
Method
- 3 SHAKE all ingredients with ice and strain back into shaker.
- 4 DRY SHAKE (without ice) to emulsify.
- 5 FINE STRAIN into ice-filled glass.

Alexandre Girard created this drink in 2017 at La Queue du Coq in Annecy, France. He shared that "Suzette is the name of French song. It's the story of a guy who falls in love with Suzette; a smart, smooth, incredible young woman. The scene takes place in a local dance in the middle of summer."
