Ingredients

1 slice Cucumber (fresh)
1 2/3 oz Gentian liqueur
1/6 oz Peated malt whisky
1/2 oz Tarragon sugar syrup
5/6 oz Lime juice

How to make

Serve in a double old-fashioned

Prepare

  1. 1 Select and pre-chill a DOUBLE OLD-FASHIONED GLASS.
  2. 2 Prepare garnish of cucumber slice.

Method

  1. 3 MUDDLE cucumber in base of shaker. (Ideally, cut skin from the cucumber log before chopping).
  2. 4 Add other ingredients and SHAKE with ice.
  3. 5 FINE STRAIN into ice-filled glass.

Garnish

  1. 6 Garnish with cucumber slice.

History

This aperitivo sour features vegetal freshness from cucumber, bittersweet gentian liqueur, and peated scotch.

James Cunningham created this cocktail in 2017 at Hawksmoor (Seven Dials) in London, England. Cunningham notes that his head bartender suggested the pairing of pungent ingredients like Suze and peated scotch. He recalls, "My head bartender told me that, much to her surprise, super pungent ingredients like Suze and peated scotch were actually great bedfellows. And so began the romance of Suze and peat. When we put the drink up on the blackboard at Hawksmoor Seven Dials, it simply read: \"Suze & Peat by Jim Cunningham\", this made it sound like a) I authored a children's book and b) that it was definitely one with a happy ending. Suze and peat are a baller couple. The resultant drink is an amazing, strange mix of bitter and fresh palate cleansing flavours, the cucumber, tarragon, and lime really help to accent Suze's green, grassier notes but don't remove anything from that distinctive bitter kick."
