1/4 oz Maraschino liqueur
1 1/3 oz Pineapple juice
4 drop Margarita Bitters

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of skewered Luxardo Maraschino Cherry.

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Garnish with skewered cherry.

History

Subtle and fruit-forward. A cautionary note: this drink is deceptively strong.

This cocktail is thought to have originated at the Cotton Club in Harlem, New York City, shortly after Prohibition. The Harlem Cocktail is first documented in the 1934 publication Old Mr. Boston Bartender's Guide and later appeared in Charlie Conolly's 1939 book, The World Famous Cotton Club: Book of Mixed Drinks. The recipe listed is: Harlem Cocktail 1 ½ ounces Gin ¾ ounce Pineapple Juice ¼ ounce Maraschino liqueur In a shaker muddle two or three pieces of fresh pineapple. Add gin, pineapple juice, Maraschino liqueur and fill with ice. Shake and pour into Old Fashioned glass.
