Ingredients

1 2/3 oz Cognac (brandy)
2/3 oz Lemon juice
1/3 oz Sugar syrup 'rich' (2:1)
1/6 oz Orgeat syrup
2/3 oz Egg white (pasteurised)
1/3 oz Creole bitters

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.

Method

  1. 2 SHAKE first 5 ingredients with ice and strain back into shaker.
  2. 3 DRY SHAKE (without ice) to emulsify.
  3. 4 FINE STRAIN into chilled glass.
  4. 5 Slowly pour Creole bitters onto a spot in the centre of the cocktail. After about a minute or so, a 'Thin Pink Line' of bitters develops below the foam.
