1/2 oz Gentian liqueur
1 1/3 oz Fennel tea
4 dash Absinthe
1/6 oz Sugar syrup 'rich' (2:1)

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 SHAKE all ingredients with ice.
  3. 3 FINE STRAIN into chilled glass.

History

A delicate, dry aperitif. Genever provides a bready spirit base; gentian, fennel and absinthe flavours are layered.

Emily Muscutt adapted this recipe in 2017 at Toto, Newcastle, England. The original concept for this drink was as a low-alcohol option, without the genever, to align with the growing trend for lower alcoholic beverages. It was envisioned as a drink suitable for afternoon consumption, a time traditionally associated with tea.
