History

Agave flavour is prominent in this simple Margarita, made without orange liqueur.

Created around 1987/88 by Julio Bermejo, this cocktail was named after his family's Mexican restaurant and bar in San Francisco, which proclaims itself the "premier tequila bar on earth". Tomas and Elmy Bermejo established Tommy's in 1965, and Julio is one of their five children, all actively involved in this truly family-run enterprise. Julio has achieved legendary status in the drinks industry for the Tommy's Margarita, his profound knowledge of tequila, and his dedicated mission to champion quality tequila. The Tommy's Margarita is now a staple on bar menus globally. Consequently, the modest family restaurant where the drink was conceived has transformed into a pilgrimage site for bartenders and patrons eager to experience the now-famous cocktail at its place of invention. Their efforts are richly rewarded. At Tommy's, the traditional Margarita combination of tequila, triple sec, and lime is elevated through the use of agave syrup instead of triple sec, and hand-squeezed Persian limes.
