Ingredients

1 1/2 oz Blanco tequila
3/4 oz Apricot liqueur
3/4 oz Lime juice
1/6 oz Sugar syrup 'rich' (2:1)
2 drop Saline solution 4:1

How to make

Serve in a coupe glass

Prepare

  1. 1 Select and pre-chill a COUPE GLASS.
  2. 2 Prepare garnish of lime wedge.

Method

  1. 3 SHAKE all ingredients with ice.
  2. 4 FINE STRAIN into chilled glass.

  1. 5 Garnish with lime wedge on rim.

History

Apricot liqueur replaces triple sec in this variation, which otherwise follows a classic Margarita recipe. The previous recipe, based on reposado tequila with half a bar spoon of agave syrup, has been updated in January 2025 to better suit the clean, fresh notes of blanco tequila with a spoon of sugar syrup, as seen in the Toreador. The previous recipe was: 50ml (1⅔oz) reposado tequila, 25ml (5/6oz) apricot brandy liqueur, 25ml (5/6oz) lime juice, 2.5ml (½ barspoon) agave syrup and 4 drops margarita bitters.

William J. "Billy" Tarling's 1937 Café Royal Bar Book contains the first known publication of this Margarita variation. TOREADOR. ½ Tequila. ¼ Apricot Brandy. ¼ Fresh Lime or Lemon Juice. Shake. In addition to this Margarita riff, Tarling's book features a cocktail named Picador, which is the same as the Margarita as it is known today. Considering the genesis of the Margarita, it is notable that Tarling's book predates the earliest known mention of a cocktail called Margarita by 16 years.
