2 dash Aromatic bitters
5/6 oz Aged Jamaican rum

How to make

Prepare

  1. 1 Select and pre-chill an OLD-FASHIONED GLASS.
  2. 2 Prepare garnish of lemon zest twist.

Method

  1. 3 POUR first half of the rum, sugar syrup and bitters into glass.
  2. 4 Add two ice cubes and STIR.
  3. 5 Add rest of rum, another couple of ice cubes and STIR again.
  4. 6 Fill glass with ice and STIR again.
  5. 7 FLOAT apple juice.

Garnish

  1. 8 EXPRESS lemon zest twist over the cocktail and use as garnish.

History

This Rum Old Fashioned presents molasses notes.

Created in 1990s London by Dick Bradsell, this twist on the Old-Fashioned is made directly in the serving glass. Bradsell added ingredients and ice cubes sequentially, stirring between each addition. He preferred using inexpensive, clear apple juice over the cloudy, pressed variety, believing "cheap is best" for this cocktail. The inspiration came from learning about the decline of the British apple farming industry and the production of concentrated apple juice. Bradsell also noted his fondness for Myers rum, considering it "much underrated" and "great in cocktails." The method is described as "Make like an old fashioned (it's an old fashioned made with a little sugar, Myers rum and a splash of apple juice with a lemon twist)." The recipe details: Into an old fashioned glass, add 1 barspoon cane sugar syrup and 2 dashes of Angostura. Stir with 1 cube of ice. Add 25mls Myers rum, 1 cube ice, and stir. Add two cubes ice and stir. Add 25mls Myers and stir. Add 1 ice cube and stir. Add 20mls concentrated apple juice (the cheap clear stuff). Garnish with a lemon twist (or two).
