Ingredients

1 1/4 oz Americano bianco
3/4 oz Fernet liqueur
1 oz Pink grapefruit juice
1/3 oz Sugar syrup 'rich' (2:1)
2 oz Pink grapefruit soda

How to make

Serve in a collins glass

Prepare

  1. 1 Select and pre-chill a COLLINS GLASS.
  2. 2 Prepare garnish of grapefruit zest twist.

Method

  1. 3 SHAKE first 4 ingredients with ice.
  2. 4 STRAIN into ice-filled glass.
  3. 5 TOP with soda.

Garnish

  1. 6 EXPRESS grapefruit zest twist over cocktail and use as garnish.

History

Top with soda and serve immediately. The transition from this cocktail's light, fluffy, foamy entry to its bittersweet, earthy, almost coal-dust and liquorice herbal depths is so enjoyable that a second drink is desired just to savour the foam. A triumph!

Adapted from a recipe created in 2012 by Tyler Wang at No. 9 Park, in Boston, USA. This drink was apparently inspired by Milk & Honey's Rome is Burning cocktail. Pink grapefruit soda has been used, as it is believed to enhance this cocktail more than the club soda specified in Tyler's original recipe.
