5/6 oz Bourbon whiskey
5/6 oz Cognac (brandy)
2/3 oz Gentian liqueur
1/2 oz Dry vermouth
1/6 oz Amaretto liqueur
1/6 oz Sugar syrup 'rich' (2:1)
1 dash Creole bitters
1 dash Aromatic bitters
How to make
Serve in a old-fashioned glass
Prepare
- 1 Select and pre-chill an OLD-FASHIONED GLASS.
- 2 Prepare garnish of lemon zest twist.
Method
- 3 STIR all ingredients with ice.
- 4 STRAIN into ice-filled glass (preferably over a large cube or chunk of block ice).
Garnish
- 5 EXPRESS lemon zest twist over the cocktail and use as garnish.

Spirit-forward and bittersweet, yet balanced. Reminiscent of an old-fashioned, drinkable as an aperitif.
Robbie Neskens created this cocktail in 2018 at Bruut, Hasselt, Belgium. Neskens explains, "This cocktail is a twist on the classic Vieux Carré. Vieux Carré and Vieille Place both have the same meaning: Old Square. With the difference Vieux Carré being masculine and Vieille Place feminine."
