1 1/2 oz Mezcal
1/2 oz Orange-red aperitivo
1/4 oz Ginger syrup
3/4 oz Lime juice
3/4 oz Pineapple juice
2 drop Saline solution 4:1
How to make
Serve in a coupe glass

- 1 Select and pre-chill a COUPE GLASS.
- 2 Prepare garnish of skewered crystallised ginger.

- 3 SHAKE all ingredients with ice.
- 4 FINE STRAIN into chilled glass.

History
Smoky, tangy, and complex with layers of flavour, where mezcal happily dominates. This cocktail also works well strained over ice in an old-fashioned glass.
Stephen Wicker created this drink in 2016 at the Raleigh Bar in Miami Beach, Florida. His original recipe uses twice the amount of ginger syrup, but the syrup he makes in-house has a 1:1 concentration.
