History
A Rob Roy variation, substituting some sweet vermouth for rich PX sherry and adding orange bitters creates the William Wallace. A well-conceived cocktail that is spirituous and quaffable if dilution is correct (hence optional chilled water). Be warned!
This recipe is adapted from one created in 2019 by Joe Schofield of Manchester. Joe Schofield states, "The William Wallace is inspired by and takes elements from the Rob Roy and Bobby Burns and is named after another Scottish hero with an alliterated name." Schofield's initial recipe calls for a Coupe glass, but the drink's volume seemed better suited to a Nick & Nora glass. It also benefits from dilution; therefore, if using ice directly from a freezer, consider adding a small amount (7.5ml/¼oz) of chilled water before stirring.
