About this bottle

This is a single barrel selection of bourbon with a mash bill of corn, malted barley, and malted rye that is initially matured in traditional new, charred American oak. It is then finished with Aspen oak staves. It is bottled at 127 proof.

Isn't it beautiful when passions collide? @distillery291 owner/distiller Michael Myers crafted his original still from ex photogravure plates that he used from his photography career. 🤯 Barrel Proof Bourbon 64.2% 128.4 proof, Barrel 633: Its aroma has pleasant depth from the charred aspen wood staves and aged oak, complimented by orange rind, dried fruit and dark brown sugar. This nose evokes the 291 Distillery signature "wild west" scene in my mind, complete with stunning boots and squeaky saloon doors. Much like the Barrel Proof Rye, the palate was served better by adding a couple drops of water. A wave of baking spice is met by savoury solvency and pepper. Its medium finish is belly warming, lightly drying with lingering aspen wood and cinnamon. There are elements in here that are reminiscent of a high ester Jamaican rum. I would love to experience more of the sweet notes from the nose within the palate but it certainly earns points for originality from more-conventional bourbon profiles. 7.25/10 *Note: Each these bottles were tasted independently with a fresh palate per pour. Proofs in these samples are slightly higher than what is being widely released.

This glorious single barreled treat is dark copper in color with very thin oily legs. This bourbon is a delight to look upon. The savory nose explodes with delicious notes of sweet corn, BBQ sauce, caramel candy apples, citrus, vanilla, aspen dust, cloves, and mint. The palate starts with intense heat to begin, then eases into notes of cinnamon, rich syrupy cherry, caramel, honey, brown sugar, smoke and char. With a splash of water it’s more reminiscent of an old fashioned with the notes of cherry and orange turned up. The finish is lingering, cinnamony, and very dry yet sweet, like eating a s’more. My particular bottle is one of 49 from barrel 543. I am a big fan of this whiskey and think the uncut proof allows the flavors and ruggedness to flow unbridled! I definitely recommend! Thanks 291! This one is definitely a fighter. It’s aroma is a lot of maple syrup, French toast, almost light cinnamon luring you in to a very sexy smell... then it goes down. Mahogany, cedar, and sweet wood and grain notes... that slowly and seductively turns into.... HEAT. Very hot on the finish and aftertaste, and it lingers. The aroma, taste, mouthfeel, and finish are all superb in my opinion, it just puts a branding iron on your tongue while it’s kissing and loving you.

This has a very interesting nose. I get overwhelming piney notes with citrus, assuming from being finished with aspen staves. The nose follows through into the palate with pine, citrus, and brown sugar. The finish is sweet, but you can't shake the pine taste. I would not buy this again, I think it's best to keep Aspen and bourbon separate. This goes up there with woodford masters 17 five stout as the worst whiskey I've had.

Distilled in my local area, so let’s give it a go: Nose: baking spices, wood, fruit hard candies Palate: fresh raspberries, cinnamon, some brown sugar, wood Finish: mild pepper, citrus rind, faint dark sweets (caramel?), woody astringency Good, but not really good or great. Not sure worth the price. Better at 45-50 a bottle than the 75-100 you see. I will say this, it is ASTONISHINGLY smooth for its 126 proof.

NEAT NOSE - The cedar tray of a humidor. PALATE - Alot of Pine and Cedar FINISH - Regretful. The pine and cedar just go on and on. It’s also astringent. Very harsh. BUY? - Absolutely not. BUY AGAIN? - Absolutely not. Drain pour. To date, this is the worst whiskey I’ve had.
