Surprisingly, the Cabernet adds a rich lushness to the spirit, without much fruit. There’s an almost creaminess to this whiskey that is extremely approachable. It’s only at the tail end of the tasting that the wine character winks hello. An excellent expression.
About this bottle
This whiskey begins with Kentucky straight bourbon (70% corn, 21% rye, 9% malted barley) distilled by Owensboro Distilling Co. and is aged at least 2 years. Then bourbon is dumped and batched into a tank and further aged with selected oak staves. In this case, 80% of the staves were former California cabernet sauvignon wine staves and the remainder were new French oak staves. Bottled at 88 proof, this updated version was released in late January 2022.
