Cachaça is produced on the farm with the same name (Monte Alto) in the city of Salinas (national capital of Cachaça) in the state of Minas Gerais. The distillate is stored in barrels of Bálsamo for 3 years which brings a wood that gives the drink a greenish-yellow color, herbal notes, fennel, agreeable freshness and integrated alcohol, medium-persistent finish. Its aroma is quite characteristic, with fruity odors reminiscent of dried plums and spices. As for the flavor, the balsam leaves the distillate with a drier appearance and with hints of almond during tasting. With a higher alcohol content of 44%, but this alcohol is integrated.
