This is an additive free 100% agave tequila from Michoacán. It is made from estate grown agave that is cooked in a combination of stone ovens and autoclave and crushed/extracted in a combination of diffuser and roller mill. It undergoes open air fermentation with natural yeasts in stainless steel tanks without fibers and is 2 x distilled in stainless steel tanks with copper coil. Additionally, it is aerated and rested in American oak before it is carbon filtered and bottled at 80 proof.

Ethanol and oak nose have way to a surprisingly sweet and mild palate. Apple and banana on first sip, with agave, clove, and toffee finish. A true gem based on the economical price tag.
