Remarkably fruity, almost apple-like flavor profile. The body is light, and the oak tannins only come into play about mid-way through the journey. We are reminded of an eau-de-vie. The familiar “burn” of an 80 proof spirit is softer and more reticent, which is not a bad thing. Indeed, this spirit is deisgned for enjoying small sips as is, as opposed to watering it down over ice. Unique, and a rare experience to be able to try a barrel proof spirit that is entirely appraochable without dilution. We applaud Cascade Moon for releasing what could have been seen as a generous loss to the angel’s share.
About this bottle
This release in the Cascade Moon series features a 15 year-old spirit which was made from a mash bill of corn, rye, and malted barley. It's bottled at barrel proof. However, as the bottling falls below 80 proof (40% ABV), it cannot be classified as as a whiskey, but as a "spirit distilled from grain." Bottled at 79.8 proof, it's available for a limited time as of June 2022 in Tennessee, Texas, and California. (SRP $124.99)

Just didn't get this one. Very short on flavor, almost watery by nature. The finish produced a bitterness. You can do way better, for way less. I will pass on this bottle
This cost three digits? I must be missing something. It’s obviously not heavy. That’s to be expected. The problem is a lingering sticky candy sweetness- not in a good way.
