Casa Centinela (NOM 1140) has been producing tequila for over 100 years at their Los Altos (Highland) distillery in Jalisco, Mexico. The piñas of 8-year blue weber agave are cooked slowly in clay ovens and crushed. The extracted aguamiel is then fermented, twice-distilled, and aged in ex-bourbon barrels.
