Nose: Baked apple, orange water, sultanas, crisp freshly milled barley, buttered brioche. There is a light touch of vanilla coming from the bourbon casks that is initially occluded by the very fragrant fruity character. However with time the vanilla presence grows. The barley aroma is so rich this noses more like pot-still than malt whisky. Palate: Sweet, unctuous barley right from the initial sip. It’s very fruity and rich but still light in touch and it reminds me of a light, flaky apple pastry. The development brings the barley more to the front and the texture is luxuriously oily and creamy. Again, this is reminiscent of pure pot-still whiskey. Finish: Medium/Long. Fruity with apricot and pear liqueur notes. There is a pleasant sweet woody quality that lingers. This is a very enjoyable and easy-to-drink single malt. It’s neither the most complex nor the most interesting malt I’ve tasted, but it is eminently approachable and seductive. In its neat form it is very oily and leans into sweetness but adding a few drops of water balances this by developing a mildly mineralic peppery quality. This is the only Dingle whiskey I’ve had but based on this sample I would not hesitate to try more. I’ve only rated it as “Good” here but the price is fair and if you can find it I’d recommend a taste. “Good” : 83/100 (3.5 stars)
About this bottle
This is the 5th small batch single malt release for Dingle Distillery. It was triple distilled and matured in a combination of ex-bourbon, Pedro Ximénez (PX), and Madeira casks. It is bottled non chill-filtered at 46.6% ABV.

Nose: Buttery toffee, Grape-nuts, spiced figs, banana-lead dried fruit, malty sweetness and vanilla cake. Palate: Buttery malt and toffee, baking spice, dates, banana-lead dried fruit, vanilla cake and apricot. Finish: Med-long -> Banana-lead dried fruit, vanilla cake and toffee fade out minerally.
3.17.22 Served: Neat, Flute Bottle Open: 3 days Aroma: Leather, old books, apples, radish, celery, vanilla. Flavor: Peppery and thick mouthfeel throughout. Baked carrots, poundcake, caramel. Significant bitterness on the finish.
Love dingle and all I’ve tried from them. This whiskey has nice sweetness on the palate and very smooth. Stand out from other Irish whiskeys. Briny taste of the sea and salt air where it’s aged
