An elegant, grain to glass, Cask Aged Gin by Paul Hletko founder of FEW Spirits Distillery in Evanston, Illinois. It starts with a base grain Spirit that has the base character cooked out of it; then infuse botanicals & one of those is hops. It has an aromatic birth with notes of black pepper, lemon zest & a hint of pine; while a rich & spicy life adds notes of shortbread, ginger, pine, fennel, juniper & berry compote; that leads to a balanced death with hints of wood, gingerbread & strawberry. FEW Barrel Gin takes a fairly neutral spirit base and flavors it with juniper, coriander, and other botanicals. It is then aged in a mix of new American oak barrels and used rye and bourbon barrels before bottling at 46.5% abv.

Incredibly complex for a gin. My first barrel-aged gin. Spicy and citrus with pepper, then woody into a warm vanilla spice finish...maybe a hint of ginger? Had this neat at room temperature so would like to try this chilled. This would make a spectacular exotic martini, eager to try in a G & T. Might need to revisit this score over time.
Makes a great Negroni.
