A rich, Straight Bourbon Whiskey by Scott Blackwell & his wife Ann Marshall, founders of High Wire Distilling Company in Charleston, South Carolina crafted with 100% local Jimmy Red corn; then aged for a minimum of 2 years in in char 3.5 American oak barrels before being bottled at 47.5%. It has an aromatic birth with notes of corn, wood, nuts, herbs & spices; while a creamy life adds notes of mint, brown sugar, tobacco, graham cracker & vanilla cream; that led to a silky death of medium length adding notes of pepper, oak & honey. Jimmy Red Corn Bourbon is made by High Wire Distilling based in Charleston, South Carolina. It is made with 100% Jimmy Red corn, an heirloom corn variety that was known as a moonshiner's corn. Jimmy Red has been rescued from extinction after the seeds from the last two cobs were used to bring the variety back. High Wire ages this bourbon for a minimum of two years before bottling at 95 proof.

Nose shows shortbread, with some vanilla and slight grassiness. Palate begins with vanilla custard and moves rapidly to cinnamon with a hint of peppermint. Finish is continued cinnamon with undertones of dry oak. Overall, the components do not provide an integrated whole. Needs more aging.

On the nose i could not really pick up any defined scents, on the plate it was very heavy on the baking spice and had a burn that lasted a while. For the price point ($90 a bottle) I have had much more complex and better tasting bourbons at half the price.
Not the smoothest bourbon around but sure enough interesting! A bit spicy and it builds for just a bit but the backside is where all thr flavor is on this one. Maybe a little woody and dry but a hint of butter has all that dryness forgiven!
