HIMKOK Distillery is a craft distillery located in Oslo, Norway. The distillery produces vodka and gin, but their primary focus is on aquavit. HIMKOK Aquavit is made with a potato spirit as the base along with caraway (and other spices and citrus), but it is not aged. Norwegian Aquavit has a Geographical Indication (GI) which dictates that it must be aged as well as being made from 95% Norwegian potatoes. So despite the fact that it is distilled in Norway, it cannot be called "Norwegian Aquavit" as it isn't aged.
