Produced by Seattle Distilling Co, Idle Hour Whiskey is a single malt distilled from barley harvested from Washington state's Palouse Valley. Local wildflower honey is added during its fermentation and the used cabernet sauvignon French oak casks used for aging are coopered and charred in-house at the distillery. The whiskey leaves the barrels at 115 proof before it is watered down to 88 proof.

Dark sweet honey smell, and same flavor. There's maybe a medicinal bite underneath it too, I can't quite place the flavor. The bitter from the medicine and the dark honey are an interesting combo, rich and complex. Certainly original.
