Nose: Strong caramel and vanilla at first, with butterscotch, and buttery oak undertones. Palate: Quite warm and spicy on the palate, with more caramel, red fruit and black pepper. Fairly hot, with good body. Definite caramel finish.

About this bottle
This expression is named for the Bellefontaine Farms in Basco, WI that were originally purchased by the Henry family in the 1800s. Barrels of straight bourbon are selected by "French Cognac process" and finished for 8 months in ex-Cognac French oak barrels, a minimum 5 years in all. It is brought to proof with "Petit Eau", water that had been aging in bourbon barrels a minimum 3 years. Proof varies by batch.

Batch VIII btl. 1288. Aroma of vanilla, caramel, and a touch of cinnamon. Flavor had some higher alcohols, cinnamon and clove with vanilla finish and some burn
Aromas are floral, caramel, vanilla, and spice. Flavors are similar to nose and dialed in sweet. Strength is well hidden. Very nice.
Big maple vanilla and barrel aroma. Cognac and "whiskey" flavor. Drops of water bring out molasses notes. Faint cinnamon note.
Fig and cherry on the nose. Subtle cognac. More cognac and sweet corn, some honey, peanut brittle, long finish.
Toasty, sweet, spicy, woody. Au revoir, wonderfully weird bottle.
