As the tag states, this voyage saw extra rough seas that drove the bourbon into the barrel, absorbing the sweet oak flavors. That couldn’t be more obvious when the first sip hits the frontal tastebuds. This is one of those bourbons that just explodes with flavor and really hits my sweet spot (pardon the pun). I moved it around on my tongue, searching for the salt, but could only find a hint. A little more and I would have given this 4.75 stars. As another taster said it finishes with hot cinnamon, which is a great complement to the initial sweetness. After two tastes and comparison with Joseph A Magnus, I went back to Total Wine and picked up another bottle for $85. This is as good as you can get off the shelf nowadays.
Jefferson's Ocean Aged At Sea Voyage 21 Cask Strength
About this bottle
The straight bourbons from Jefferson's Ocean Aged At Sea collection have aged around 6 to 8 years on land, before the barrels are sent off to travel at sea for several months. The OCEARCH research vessel covers 5 different continents and 30 ports of call. Voyage 21 was a rough trip from Savannah, Georgia to Manzanillo and also on its return from the North Sea. As a result, there was quite a lot of contact with the wood for this trip. Voyage 21 was bottled at a cask strength of 56% ABV.

This is my first go at the ocean going whiskeys. Cask strength seems to be my sweet spot lately so we shall see where Voyage 21 fits in. Nose is of the seven seas on a mighty pirate ship.... just kidding. Nose is actually quite light to me with mild brown sugar and caramel notes. First sip is a wash of flavor across the palatte. Deep brown sugar and vanilla syrup and a warming cinnamon heat. Also taste some toasted almonds on the edge of the sip. The finish is not overpowering and closes with a touch marzipan. A nice dram to close the day, but not sure it is worth the heavy price tag.
Definitely get the savory taste mixed with a sweet nose. Overall smooth. There’s a little different twist in every sip. Nose is honey and maple with a light fruity sweetness. Thick consistency. Sip coats everything it touches and that sweet savory honey lingers for a solid few seconds. Aftertaste stays there and goes from maple to a smooth almost salty fruit. Complex. A little water really opens it up. I’m a fan of the aging at sea. It works.
Nose is toffee, apple, marshmallow, leather, star anise, and cinnamon rolls. Entry is rich and well-rounded. Palate is smoky, spicy, vanilla, oak char, with some nice cherry and apple notes that light up the bright, lingering finish. Some tannins and oak finally let the whiskey fade into enjoyment. Rich and flavorful cask strength from Jefferson's.
Delicious. It’s got a nice salty finish. Caramel and vanilla. It’s hard to believe that this is cask strength. I thought it would be a gimmick, but aged at sea is no joke. Nice heat from a high abv bourbon. Typical flavors from bourbon, with an almost single malt scotch feel.
For me this packs a great punch backed with some spicy notes and flavor, it's very addictive as I keep going back to it. I like to start neat for a few sips then a 1/3 chunk of ice.. But that's all you need to open it up a bit.. Typically a 2 shot pour for me +
