The mission statement at Kimo Sabe is a modern style of mezcal that trades in the rustic history for a millennial-friendly tipple that utilizes modern techniques such as a third distillation and ultrasound technology. This is all in an aim to unseat tequila as agave king. Their añejo ages for 18 months (despite the one year declared on the bottle) in used American oak which previously held their reposado mezcal.

A rich Mezcal by father-daughter team of Jim and Ashley Walsh NOM-O286X sourced from Oaxaca & Zacatecas, Mexico. They decided to create the sweetest & most flavorful Mezcal using non-traditional methods: first they distil it thrice (twice in steel & once in copper stills); then they use high-tech sound wave technology to homogenize the molecules in the Spirit. It is then aged for 18 months in American oak casks, which were previously seasoned while aging Kimo Sabe Reposado. Kimo Sabe uses both steamed & fire pit roasted agave. It is difficult to know which agaves are used in Kimo Sabe as the brand uses multiple types of agaves in its blend. It has an aromatic birth with notes of tropical fruits, nuts & baking spices; while a rich & spicy life adds notes of almond, vanilla, oak, chocolate, lemon peel, orange peel, chamomile, banana, agave, sarsaparilla & licorice; that leads to a spicy death of medium length with notes of butter crème, chipotle, roasted black pepper & cayenne.
