A creamy, agave spirit by NOM-O286X. It has a clean birth with notes of agave, citrus & hints of saffron; while a balanced & full life adds earth, vegetal & orange peel notes; that led to a smooth & delicate death adding notes of ripe fruits & peppercorn. May / June / November / December 2019
About this bottle
The company works with local farmers in the Grower Support Program to sustainably grow and harvest the agave used in the mezcal. Kimo Sabe ("trusted friend") mezcal was made by using a combination of new traditions--agaves steam-cooked in ovens, then milled and old traditions--agaves roasted in open pits then crushed with tahonas. These two batches ferment separately and then are blended together before distillation. The third distillation is done in a pot-still.The joven is bottled unaged at 43% ABV.

Chocolate earthy notes, minerals, clay, slightly smoking on the finish. Sweet melon and vanilla. Nice sipping mezcal.
Personally, I think this is the best Mezcal they produce. Not as bold as I would like, but makes great cocktails!
This is my new favorite for making margaritas. It adds a layer of flavor that tequila just doesn't have.
Tried neat at ski Santa Fe totemoffs bar. Taste more like a tequila than mezcal… I wanted more smoke
