About this bottle

This is a bourbon distilled from a mash bill of locally grown non-GMO 70% corn (this grain is grown at the distiller's own farm), 15% wheat, and 15% toasted malted barley. It is distilled to 137 proof on a copper pot still with a 110 barrel entry proof. It is matured according to bottled-in-bond standards in new, charred American oak barrels with a #4 char for at least 5 years, and bottled at 100 proof.

This batch (early 2024) is significantly spicier (and less sweet) than the pour I tasted a few months ago. The nose is predominantly toffee and cinnamon, with a hint of leather. Palate shows more toffee, transitioning into red hots and spice. Finish is medium-short, with leather, then quickly moving to pepper and cinnamon on the tip of the tongue.

Crème brûlée, malted grain, vanilla, oak, butterscotch, cinnamon, cocoa, pear and corn nose. Sweet and spicy, malted grain, cinnamon, caramel apple, barrel spice, oak and popcorn on the palate. Peppery finish. Some very unusual elements for bourbon, as it’s dominated by the taste and smell of pre-fermentation malted grain, like I’m brewing beer.

A benchmark i judge other bourbons by- tastes almost like brioche, rich and buttery in the best way possible. Not too sweet almost like french toast before adding maple syrup.

Smells so sweet but it has a nice kick to it. Pepper, spice on the tongue, bit of smoke char, wood. Nice long finish. Really enjoyed.
