About this bottle

A spirit with “heart”. Alipús is a co-op made up of mezcal producers throughout Oaxaca. With the help of Los Danzantes they have banded together to produce a series of single-village mezcals, each displaying the particular terroir and traditions of each mezcalero and village. San Balthazar carries the distinction of being fermented using wild yeast in pine vats by Mezcalero Don Cosme Hernandez. It is a “high elevation” mezcal made from agave espadín grown at an elevation of 5,700ft in very rocky soil. .

My 2nd mezcal. Something new! Tasted neat from a snifter. On the nose is black pepper, green pepper, agave, slight citrus, celery salt and ethanol. On the palate I'm getting banana skins, smoke, complex herbs, some sweet fruitiness and an almost meaty finish. This is rich, but not as smoky as Ray Campero Espadin and without the traces of iodine and minerals that that mezcal brought. The finish is quick, with a clean fade that leaves a sweet aftertaste and just the hint of smoke. Any ratings that I provide regarding mezcal should be tempered with the fact that I have had very few of them. This one is quite interesting, but not really in my lane. I'd like to try it in some mixed cocktails. It's complex and tasty. I think this would be a fine accompaniment to a spicy dish or even a smokey barbecue.

An elegant, Joven Mezcal by Déstileria Los Danzantes NOM-O14X in Oaxaca, Mexico. Mezcaleros Don Cosme Hernandez, his wife Cristina & his son Cirilio collect wild maguey Espadin agave from the nearby mountains & handcraft each batch using wood roasting, stone-milled pulp, ancient pine fermentation tanks, & a tiny copper still to double-distill the Spirit. It has an aromatic birth with notes of earthy minerality, smoke, citrus zest, guava, cilantro & tropical florals; while a rich & spicy life adds notes of citrus with parsley, sage & a hint of ripe banana; that led to a short, crisp & herbal death with a hint of earth & agave. December 2020 / April 2021

Nose - agave, spice Palate - rubber/sweet taste, fruits Finish - spicy, medium, tasty Overall - the spice and the rubbery taste (I guess that’s the ripe banana) are unique it’s a cool one to drink. Would be a good party drink
