An off-dry, Cask Strength Brandy by Nicolas Palazzi for the DYC Distillery in La Pardina, Spain. It is distilled, from 100% Eau de Vie of the Spanish Pardina grape, in a copper pot still that is then aged for 7 years in a first-fill ex-Amontillado cask & bottled at 42.5% ABV. It has an aromatic birth with notes of herbs, rancio & plum; that leads to a long & tangy death with notes of nuts, tea, seaweed & apricot. December 2019
