The nose smells of sweet wine mixed nicely with charred oak with hints of raisins, leather, vanilla, molasses and grainy notes that come across as being rich. The palate starts soft but quickly fills the mouth with black pepper and cinnamon while sweet wine stays mostly to the front of the mouth but now comes across as being somewhat astringent. It quickly softens even more as by the next sip the spice isn't too intense. The rest of the palate falls a little flat as there are some hints of sweet molasses, vanilla and raisins, it is very gentle and easy to miss. The finish is medium and this is where the whiskey shows it's youth. The palate fades into being grassy though there is still touches of vanilla and oak behind it, albeit you have to go looking for it. This whiskey could benefit from some more aging and added complexity as the madeira finish is there, but the whiskey it started with isn't too memorable.

This whiskey is High Wire Distilling's standard bourbon, but with an additional step in its production process. After aging in new, charred American oak barrels, the bourbon finishes for about 3 to 6 months in barrels previously used to mature Madeira Sercial, a fortified wine from Portugal.

Nose: this starts off with dark fruit notes, including plums and cherries, which then turns into heavy corn notes that gives this away as a younger offering - ok start, but worried about the immaturity Palate: the fruit from the nose fades and gives way to lots of corn and cereal flavors. Don't think there is much rye in this as there is almost no spice and it drinks like a wheater or maybe even malt - no worries about immaturity, tastes decent, but does not blow you away Finish: this finishes quickly and the malt notes are the ones that linger the longest with some corn added in - leaves you wishing for more Overall: I really love the Jimmy Red Bourbon from this distillery and had high hopes for this bottle, but found it enjoyable but not blown away by it

Smells like spice cake. Baking spices and red fruit on the palate. Long, warm, pleasant finish. New favorite.
