Received as a gift. Nose: aroma of pecans, vanilla, cherry. Very pleasing! Palate: sweet, notes of creme brûlée, vanilla, mild hint of smoke, and subtle flavor of toffee. Finish: mouthfeel was subtle, after the flavors of each sip passed, there was little aftertaste. Very little alcohol burn. Overall: great introduction from this distiller. Possibly more time in the barrel may lend to a different flavor profile, but this current offering has plenty to offer. Thoroughly enjoyed this dram!

High Wire Distilling was founded in 2013 by Scott Blackwell, a CIA-trained baker (that's Culinary Institute of America), and his wife, Ann Marshall. Their bourbon whiskey is distilled from a mash of four grains: heirloom white corn, red winter wheat, malted barley, and Carolina gold rice bran. After aging in standard new American oak barrels, it gets bottled at 47% ABV.

Spicy. Heat on the backside sustains on the finish. Drinks young.
Nice smell, very mild and easy on the tongue. Very young.
