The maple comes through on the nose with a sweet, breakfasty scent. On the palate, the effect is more subtle, with the maple sugar coming out on the finish, leaving a long, lingering syrup flavor. We like the 90 proof, which adds more to the bourbon character and allows it to shine. We've really been enjoying this in the GSN offices, as we agree it makes for an excellent shot, sipper or the base spirit in a classic cocktail like an Old Fashioned.
