An intense, small batch BIB Bourbon from Smyrna, Delaware made with locally sourced ingredients & aged for a minimum of 2 years in American white oak barrels. It has an aromatic birth with notes of grain, wood & spices; while a bold life adds notes of cereal grain, vanilla & oak; that led to a rich death of medium length. December 2021 / August 2022
About this bottle
This bottling is a bottled-in-bond update to Painted Stave's Diamond State Straight Bourbon Whiskey, which was the first legal bourbon to be made in Deleware. Diamond State Whiskey was also the last brand of whiskey produced in Delaware prior to prohibition. Painted Stave Bottled-In-Bond Bourbon Whiskey is aged for 4 years and bottled without chill filtration.

Dark and complex aroma, maybe medicinal notes. Flavor reminds me a lot of rye. Medicinal notes are there on the tongue, which I always think are unique. Toffee and herbs.
Whoa! Take note Castle and Key - this is how you do a 4 year bourbon. Has that young ethanol taste, but also is really malty and oaky. Surprisingly complex for its age.
Predominantly vanilla on the nose. Palette is spicy with notes of wood, syrup, caramel, and a hint of smoke. Spice lingers in the finish with some mild bitterness.
Applesauce, raw dough, mild spiced grains nose. Stewed apples, minor barrel spice, young oak, and nutmeg. Touch of sweetness. Moderate warming finish. Solid pour.
Tasted as part of a Whiskies of the World sample box. Cinnamon and honey on the nose, Corn sweetness then spice taste. Definitely a rye spice on the finish.
