I tried Pasquet's XO after some favourable reviews - anything aged for 25 years would have to be decent, right? Although there are the expected notes of dried fruit and an unidentifiable spiceciness to the palate, the smell and the taste retain a strong alcoholic burn which is disappointing in a 25 year old cognac.

About this bottle
Jean-Luc Pasquet and his wife, Marie-Françoise, had been growing fruit conventionally on their 7 hectare estate until 1995 when they began to explore organic winemaking. In 1998, they were granted "Agriculture Biologique" certification. Their Coeur (meaning "heart") de Grande Champagne is not labeled with an age-statement or VS, etc. designation, but is intended as an entry-level offering with 5-10 years of aging in Limousin oak.
