The nose is a nice light grain with a dab of honey. A tinge around the edge, like a box of spices had walked past the barrel during maturation. Spice definitely grows the longer it sits in your glass but never overpowers. The palate taste is young and a little rough, with a moderate campfire smoke poking through. There's a light fruit on the finish after the smoke clears, apple or pear. Strong wood notes with a larger swallow. A little too young and raw, it doesn't feel put together. Would like to know what this is like with a few more years of maturation.

About this bottle
Founded in 2005, Peach Street Distillers is Colorado's oldest independently owned and operated craft distillery. Their American Single Malt is matured in used barrels—freshly dumped barrels of their own Colorado Straight Bourbon. The peated single malt is barreled at 120 proof, is aged for an average of four years, and is then bottled at 92 proof.
