Toasted Bourbon is part of Penelope's core portfolio. It features their signature four grain bourbon (corn, rye, wheat, and malted barley) at full maturation. Then it is finished in a new, custom toasted barrel with the char and toast level varying from batch to batch. It's bottled at 100 proof.

Nose is a fairly standard offering of vanilla, caramel, and cinnamon. Some apple comes out as it sits in the glass. A hint of toasted oak underneath. Ethanol is very low so points for that. Palate has the caramel and vanilla from the nose morphing into a custard/flan like quality. Add some baked apple, oak, and shortbread. A bit bland, as flavors are muted and lacking punch. Drinks like an 80 proofer and it’s not a compliment. Short finish brings brown sugar, pepper, and baking spices in the form of cinnamon, allspice, and clove. Oak is there, but for a toasted offering it’s not particularly toasty. A nice citrus burst of lemon/lime near the end. Mouthfeel is thin, light, and airy. Could use some more heft. Some MGP brightness, but so much so that it’s all sizzle and no steak. There’s nothing “wrong” with it per se, but at $53.99 there’s just plenty of better options at the price point. At this stage I think I will limit my purchasing of Penelope to limited releases and leave the standard offerings on the shelf.

Final Day No. 24! I have finally reached the last of the set. I must say this was quite an enjoyable experience. It had me looking forward to each and everyday. Perhaps, I will embark on next year's new journey if Flaviar decides to continue to adventure. On to the review! The nose had me guessing for a bit cause of the variety of senses triggered. I narrowed it down to burnt sugar, vanilla, cinnamon, and barrel char. The flavor was very intriguing and somewhat more complex. At first, I received notes of caramel and baking spice. Third sip in I was able to distinguish another array of flavors in addition to the primary ones I listed. Barrel char, cherry, corn, and a touch of pepper emerged. This was most definitely the star of the set. They made the right decision to save this one for last. I may in fact grab myself a bottle once I deplete my next bottle. Penelope Toasted Barrel Finish Straight Bourbon Whiskey A complex, Straight Bourbon Whiskey by MGP Indiana that has undergone a full maturation in charred new American oak, followed by a distinctive finishing process in freshly toasted barrels, for a total of 4 years before being bottled at 50.0% ABV. It has an aromatic birth with notes of grains, wood, fruits, herbs & spices; while a rich & spicy life adds notes of raw corn, vanilla, burnt sugars, cherry, cocoa & caramel; that led to a warm death of medium length with notes of charred wood, soot, burnt marshmallows, charcoal. cinnamon & pepper.

So this is the last of this years Flaviour Advent Calendar tasting… and what a nice surprise. A smooth bourbon with the toasted attributes but mellows just perfectly. Maybe a little dry… but that could just be me this year. Nice and mellow. One to enjoy on a cold winters evening.
