There is not a snowball's chance in hell that we would ever see an integrity bottling of Scapa, or so I thought. Well, here we are. Orange peel, dried apricots and a lovely flowery scent reach my nose, and I get hints of sea salt, beeswax and overripe mango. The steady arrival is sweet and sour, emphasizing citrus fruits, honey and peppery spices. It turns increasingly dry, but not unpleasantly so. Grapefruit zest, peaches and gentle tannins stay throughout the minty-fresh aftertaste. Subtle and complex, this malt showcases the quieter side of Orkney.
