About this bottle

Star Hill Farm is Maker's Mark first new mash bill and first wheat whiskey released in the distillery's history. This is an annual release with the mash bill recipe evolving each year. This 2025 release is made of from two recipes: 70% soft red winter wheat/30% malted barley and 100% malted soft winter wheat. Its aged 7-8 years in five distinct cask types including American oak, French oak, American-French hybrid, and grooved barrels. It's bottled uncut at cask strength. Named after the 1,100 acre farm that is home to Maker's Mark, this will be available in the US & UK beginning mid-May 2025 and in Australia later in 2025. (SRP $100)

Whoa, nose has some interesting things going on; baked apple, marshmallow, honeysuckle, cigar, ripe plum. vanilla, toasted coconut, and fresh cut green oak. Ethanol lets you know this is cask strength, but falls short of off putting. Very inviting. Palate is less sweet than the nose would indicate taking a turn into baking spice territory with a ton of allspice and nutmeg along with toasted oak, cashew nut, vanilla, and black and pink peppercorn. An underlying note of blackberry lurks beneath the surface. Flavors pack a punch. Finish makes things instantly better with lingering berry from the palate, burnt marshmallow, vanilla custard, cherry tobacco, more toasted oak. It’s delightfully long, but the mouthfeel leaves something to be desired as it on the lighter side of medium bodied and a tad on the grainy side which along with a drying effect on the tongue does not compliment the flavors well. A unique whiskey that I really enjoyed with a flavor profile that is unlike any other Makers expressions. I paid a FOMO just over retail price of 129.99 and at that price I really like it, but not sure if I LOVE it. Maybe I would buy it again at that price if nothing else on the shelf intrigued me? Then again maybe not. Since I am unsure, I will give it a 4.0 “possible rebuy” rating.

Nose: typical wheat nose, grainy, caramel, burnt sugar. Maybe some marshmallow Palette: fruity up front, some dark fruits under the sweet initial taste, good body, mid palette has anise and licorice. Slight bite of the tongue, more burnt sugar in the finish. Tannins on the finish. Definitely disagree with Stephanie on this one. Much better than her rating.
