About this bottle

Stellum Black, produced by Barrell Craft Spirits, is a series of specialty whiskey blends featuring rare barrels. For Fibonacci Rye, six straight rye whiskeys from Indiana, Tennessee, and Kentucky are blended and bottled at cask strength. The bottling is named after Italian mathematician Leonardo Fibonacci for which the Fibonacci sequence is named. This sequence is series of numbers with each number the sum of the previous two numbers reflecting balance. Only 9000 bottles produced with availability at select retailers nationwide beginning in July 2022.

Nose: Deep, Rich, Complex. Honey drizzled graham crackers. black tea with lemon and orange. A lovely mix of light grassy rye and dark, almost pumpernickel, rye. Rounding out the edges are bits of spearmint, dark chocolate, and clove. Palate: Heavy viscosity. Very oily. The mix of light and dark ryes and sweet butterscotch hit the front of the palate. The middle brings in the citrus heavy black tea and mint. The back palate is full of Barrel char, cocoa nibs, and clove. Finish: After swallowing, there is it swelling warmth that goes just as fast as it comes. It leaves you with rich tannins, milk chocolate, mint, and clove. Summary: A spectacular Rye blend. No idea why they're trying to clear the shelves of it. A lot of places selling it for 1/3 MSRP at the time of reviewing this. If you see this, get one! Maybe even two. Christmas isn't too far off!

For those that have a bottle that you have not opened or if you happen to see this on the shelf ***many are closing this out ***as unfortunately Barrell as well as Stellum are not really selling despite some terrific releases I bought this back in 2022 and am first cracking it My initial impression is this is WOW one heck of a superior Rye A delicious nose An impressive mouth filling palette And a incredibly tasty and long finish The 115.12 proof works perfectly My rating a very high 4.5/5

Pumpernickle with salt, spearmint, dill and sugar on the nose. Took a sip and…wow, the taste stopped me in my tracks for a minute. I try a lot of whiskeys and not many can do that. This is really good. Back to the palate which is a bready, yeasty cinnamon bun with caramel, toffee, and savory elements punching through—dill and maybe rosemary. Finish is long, spicy and savory with dill getting the final word. This is the kind of bottle that pulls me away from bourbon, my first love, and toward rye.

Sweet and spicy rye greets the palate with a warm wash of caramel tinged goodness. The mouthfeel is very round and semi-heavy mainly due to the eye popping 115.12% proof. Adding some water to bring down the fire, reveals a more tempered spirit with softer notes of nut bread, coffee cake and pecan pie. This is a whiskey that keeps on giving. One sip will not do. To celebrate your bottle, try a few ounces in your next, very special Sazerac. Truly exceptional.

Quality rye, viscous with vanilla, caramel, baking spices and a hint of sweetness. Has more grass and eucalyptus type notes than I like. But I will have some delicious rye old fashioneds, Manhattans and boulevardiers for a while. I can’t believe this is being cleared out for $25 per bottle!

Caramel sweetness. Lingering heat; needed to ice for 10 minutes to enjoy. Not bad, but I'm not crazy about this either. Minimal spice I enjoy from ryes. I Think that's why I not a bigger fan of this.
